Ingredients

  •  3 Portions of shaved steak
  • 4 slices thick sliced bacon
  • 4 eggs

Preparation Steps

  1. Cut up bacon slices into small pieces and cook to desired crispness in skillet. Set aside bacon bits and drain grease.
  2. Cook the 3 portions of shaved steak and set aside once cooked.
  3. Next scramble and cook the 4 eggs in skillet. 
  4. Add the meats and stir together.

Ingredients

  • 1-1/2 cup of egg white powder
  • 1/4 cup allulose
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1 Tablespoon nutritional yeast
  • 1-1/2 cup of water
  • 3 Tablespoons egg yolk powder
  • Melted butter for topping
  • flake salt (optional for topping)
  • Everything  Bagel Seasoning (optional for topping)

Preparation Steps

  1. Preheat oven to 325°F
  2. Add egg white powder, allulose, cream of tartar, salt, and nutritional yeast to a bowl of mixer. Mix on low-speed till combined. 
  3. Next, slowly add the water to the dry ingredients. Start the mixer on low and slowly increase the speed to high. Blend for 5-10 minutes until stiff peaks form.
  4. Add egg yolk powder and gently mix in.
  5. Bake for 15 - 20 minutes.
  6. Brush with melted butter and sprinkle on desired amount of optional toppings.

Ingredients

  • 1 cup butter
  • 1 Tablespoon mustard
  • 2 teaspoons of apple cider vinegar with the mother, such as Bragg's
  • 1/4 teaspoon salt
  • 2 eggs at room temperature

Preparation Steps

  1. Melt butter in the microwave. Allow to cool for a few minutes.
  2. Next, separate the eggs by placing the yolk in the jar for mixing the mayo and saving the whites in a separate bowl.
  3. To the jar add the mustard, salt, and apple cider vinegar.
  4. Start the blender and slowly add the butter. 
  5. Once the butter has all been incorporated, add the egg whites. Blend on high for 30 seconds. This mixture will be very runny. 
  6. Place the mayo in the refrigerator and allow it to set up for a few hours.

Ingredients 

  • 2 cups of Victoria's Keto Flour
  • 2 eggs
  • 1 cup Wholesum Yum Nature's besti sugar replacement Monk Fruit Allulose blend, granulated.
  • 1 cup butter, softened
  • 2 teaspoons vanilla extract
  • 1 package of Fruity Cereal Keto Chow
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 tsp salt
  • Good Dees Low Carb Rainbow Sprinkles for topping (optional, but fun).

Preparation Steps

  1. Preheat oven to 350℉.
  2. In smaller bowl combine all dry ingredients  except the sweetener and blend together.
  3. In larger bowl or bowl of stand mixer cream together butter and the sweetener. 
  4. Next, add the eggs and vanilla to the butter mixture.
  5. Slowly incorporate the dry ingredients.
  6. Form small rounds of cookie dough, place the tops in some sprinkles and add to a parchment lined baking sheet. Repeat till cooking sheet is full placing the cookies about an inch or so apart.
  7. Bake at 350℉ for 8-10 minutes. Allow to cool on baking sheet.

Balsamic Chicken Salad

Ingredients 

Marinade

  • 1 cup balsamic vinegar
  • 4 Tablespoons olive oil
  • 3 Tablespoons brown allulose
  • 2 teaspoons mustard
  • 3 teaspoons garlic, minced
  • 1 Tablespoon Italian seasoning
  • 1-2 teaspoons salt
  • pepper to taste

Dressing

  • 1/2 cup Olive Oil
  • 1/2 cup Balsamic Vinegar
  • 1 teaspoon mustard
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • Pepper to taste

Salad Ingredients

  • 4 pounds chicken breasts, cut into chunks
  • 12 Ounces whole black olives
  • 2 pints grape tomatoes
  • 16 ounces mozzarella pearls
  • 1 recipe of balsamic dressing

Preparation Steps

  1. Mix 1 batch of marinade and coat the diced chicken well, let rest in the fridge for at least 1 hour and up to overnight.
  2. Make 1 batch of dressing and set aside.
  3. Cook chicken in batches in a preheated air fryer at 380℉  for 8-11 minutes.
  4. Add chicken, olives, tomatoes, and mozzarella pearls to a big bowl. Mix well and top with the desired amount of dressing. Chill for at least 1 hour before serving.

Ingredients

  • 1- 1/2 cup egg white powder
  • 1/2 cup allulose monk fruit blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cake batter extract
  • 1 teaspoon liquid stevia
  • 1- 1/2 cups water
  • 1/4 cup butter powder
  • 2 Tablespoons yolk powder


Preparation Steps


  1. Add egg white powder, allulose blend, salt, cream of tarter, liquid stevia, vanilla and cake extract, and water to mixing bowl.
  2. Slowly start the mixer and increasing the speed. Beat the whites till they are stiff 5-10 minutes.
  3. Next add in the butter powder and egg yolk powder mix in gentle
  4. add the mixture to the hamburger mold. 
  5. Bake in a 325 ℉ oven for 15-20 minutes.
  6. Allow the cakes to cool slightly, then remove from molds before allowing to cool completely.
  7. Top with strawberries and whip cream. or jam and whip cream, or a keto butter cream. Any dessert topping you desire.

Nancy's Chocolate Chip Cookies

Ingredients

  • 28- 30 oz. canned tuna, drained
  • 2 stalks celery, finely chopped
  • 1 bunch of green onions, finely chopped
  • 1 jalapeno, finely chopped
  • 1 lime, zest and juice
  • 3/4 cup butter mayo
  • 1 Tablespoon of hot sauce
  • 1/2 cup of cilantro, finely chopped
  • salt and pepper to taste.
  • tomato slices, smashed avocado, pickles, pepper jack cheese, and favorite wrap, keto bread, or chaffle.

Preparation Steps

  1. add tuna to large bowl with celery, green onions, and jalapeno.
  2. In small bowl add butter mayo, lime zest and juice, hot sauce, and cilantro and combine.
  3. Add the mayo mixture to the tuna mixture and combine well.
  4. Serve on you favorite wrap, keto bun, or chaffle with sliced tomato, smashed avocado, pepper jack cheese, and pickles.

Nancy's Chocolate Chip Cookies

Ingredients

  • 2 1/4 cups Victoria's Keto Flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 sticks of butter, softened
  • 3/4 cup brown allulose
  • 3/4 cup allulose monkfruit blend
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 9 to 14 ozs of sugar-free chocolate chips

Preparation Steps

  1. Preheat oven to 325 ℉ and line cookie sheet with parchment paper.
  2. Mix Victoria's Keto Flour, baking soda, and salt in a medium-sized bowl. Set aside.
  3. In a bowl of mixer or a separate bowl cream together butter and sweeteners. 
  4. Next mix in eggs and vanilla.
  5. Add the flour mixture to the butter mixture and mix well.
  6. Fold in chocolate chips
  7. Chill cookie dough in the fridge for 30 minutes.
  8. Form cookies and place them on a cooking sheet.
  9. Bake for 8-10 minutes until the cookies are set and done.
  10. Cool cookies on a cookie sheet for a few minutes and then transfer to a wire rack to cool.

Nancy's Chocolate Chip Cookies

Butterscotch Blondies with Keto Chow

Ingredients

 Pavlova Shells

  • 4 egg whites
  • 1/3 cup powdered erythritol blend
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon cream of tartar
  • Pinch of salt

Custard Filling

Follow the custard from this Keto Chow recipe.

I used Cantaloupe, but would work with any flavor. 

Preparation Steps

Pavlova Shells

  1.  Preheat oven to 200℉ and line cookie sheet with parchment paper
  2. Add egg white to mixing bowl and whip till frothy. Then add salt and cream of tartar.
  3. Beat egg whites till soft peaks form, then add the erythritol and vanilla extract.
  4. Continue beating till stiff peaks form.
  5. Gently add egg white to piping bag and pipe mini pavlova shape.
  6. Bake for 1 hour and allow to cool in oven with temperature off and the door closed for 1-2 hours. I do 2 hours.
  7. Make the custard according to the Keto Chow website.
  8. Once shells and custard are done add a small amount of custard to shell and top with whipped cream. Store any remaining shells in an airtight container.

Butterscotch Blondies with Keto Chow

Butterscotch Blondies with Keto Chow

Ingredients

  • 2 sticks butter
  • 1 1/2 cup brown allulose
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups Victoria's Keto Flour
  • 1 pkg butterscotch Keto Chow
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Choc Zero Butterscotch chips plus a few more to sprinkle on top, spray if desired

Preparation Steps

  1. Preheat oven to 325℉ and spray an 8 x 8-inch pan with coconut oil.
  2. In a saucepan, melt the butter. Once the butter is melted, remove from heat and mix in the brown allulose until the butter is mixed in completely. Set aside to cool.
  3. In a separate bowl, whisk eggs and vanilla till frothy.
  4. In a separate bowl combine Victoria's Keto Flour, Butterscotch Keto Chow, salt, and baking powder.
  5. Next add in egg mixture followed by the butter mixture. Stir just until combined.
  6. Fold in butterscotch chips. Then spread the mixture into the prepared baking pan.
  7. Bake for 35 minutes or until a  toothpick comes out clean. Allow the blondies to cool completely before cutting into 16 pieces.

Pumpkin Cheesecake Cheeseball

Ingredients

Pumpkin Cheesecake Cheeseball

  • 1 pkg or scoop of Keto Chow Pumpkin Spice Caramel
  • 1/2 cup canned pumpkin
  • 8 oz of cream cheese, softened
  • 1 tsp pumpkin pie spice
  • 1/3 cup powdered Swerve plus an additional 1 TBS.

You will also need a stem of some kind, plastic wrap, and rubber bands.

Cinnamon Sugar Pork Rinds

  • 5 oz of pork rinds
  • 5 TBS of butter, melted
  • 1/2 cup of powdered Swerve
  • 2 TBS cinnamon

Preparation Steps - Make the Cheesecake Ball

1. Blend all cheeseball ingredients well.

2. Place in the center of some plastic wrap and wrap tightly while forming a ball.

3. Add another layer of plastic wrap and add four rubber bands to create the pumpkin shape. Refrigerate for 8 hours or overnight.

Cinnamon Sugar Pork Rinds

1. In a small bowl combine the Swerve and the cinnamon.

2. Place the pork rinds in a gallon size bag with the cinnamon sugar mixture and the melted butter. Shake well.

3. Bake the pork rinds on a cookie sheet at 200℉ for 20 minutes.

To Serve:

1. Place cheeseball in the center of a platter or plate. 

2. Surround with the pork rinds.

3. Top with the stem.

Pumpkin Cheesecake Cheeseball

Ingredients

  • 12 Egg Life Wraps
  • Cheddar Cheese
  • 2 LBS of shredded chicken
  • Black olives

For the Sauce

  • 2 Cups of Chicken Broth
  • 2 TBS Butter
  • 2 tsp garlic
  • 2 TBS tomato paste
  • 2 tsp chili powder
  • 3 tsp cumin
  • 2 tsp onion powder

Preparation Steps

  1. Preheat oven to 350℉
  2. Make the sauce by mixing and heating all ingredients for the sauce till warm.
  3. In a 9 x 13 in pan place 1/3 of the sauce on the bottom on of the pan.
  4. In each Egg Life Wrap place a small amount of the chicken which has had 1/3 of the sauce blended in and some cheese. Roll and place in the pan.
  5. Top the enchiladas with the remaining sauce. Top with more cheese and olives.
  6. Bake 30 minutes.

California Spicy Jalapeno Chicken Burgers

California Spicy Jalapeno Chicken Burgers

 Ingredients  

  • 2TBS Garlic 
  • 1TBS Cumin 
  • 1TBS Paprika 
  •  1TBS salt 
  • 6TBS butter Mayo 
  • 6 TBS picked jalapeños  
  • 1 bunch of cilantro finely chopped 
  • 1/2 onion finely chopped 
  •  3 lbs ground chicken  
  • Optional toppings 
  • Bacon
  •  Sharp white cheddar  
  • Pico de gallo 
  • Guacamole 

  Preparation Steps


  1. Mix all ingredients together well. 
  2. Form into burgers and place on a sheet pan lined with parchment to chill in the fridge. Minimum 15 minutes or up to 2 hours.  
  3.  Heat pan with a cooking oil. I used bacon grease this time. 
  4. Cook 5 minutes till browned nicely, flip and cook an additional 5 minutes or until cooked through.  
  5. Top with optional topping

California Spicy Jalapeno Chicken Burgers

Ingredients

  • 2 lbs ground lamb
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp salt
  • 1/2 tsp pepper
  • Feta Cheese
  • Parmesan Cheese
  • Tzatziki sauce 

Preparation Steps

  1. Mix spices into ground lamb
  2. Make six portions and roll them out thin inside parchment paper.
  3. Add feta cheese and seal
  4. Coat outside with parmesan cheese
  5. Cook in a 375-degree preheated air fryer for 14-16 min 
  6. serve with tzatziki sauce.
